Spring Orzo Salad with Balsamic Tofu

INGREDIENTS

Balsamic tofu
◦ 1 bloc extra-firm tofu, cut into cubes
◦ 1 tbsp balsamic vinegar
◦ 2 tsp maple syrup
◦ 1 tsp olive oil
◦ 1 tsp minced garlic
◦ 1 tsp dried oregano

Salad
◦ 2 cups orzo, cooked
◦ 2 cups spinach, roughly chopped
◦ 3 mini cucumbers, chopped
◦ 2 celery stalks, chopped
◦ 1 1/2 cup cherry tomatoes, chopped
◦ 1 medium carrot, cut in julienne
◦ 1 small red onion, thinely sliced
◦ 1/4 cup hemp seeds

Baslamic Vinaigrette
◦ 1/4 cup extra virgin olive oil
◦ 2 tbsp baslamic vinegar
◦ Juice 1/2 lemon
◦ 1 tbsp dijon mustard
◦ 1 tsp dried oregano
◦ 1/2 tsp garlic powder
◦ 1/2 tsp salt
◦ 1/4 tsp black pepper

INSTRUCTIONS

1. In a container, add the tofu and the baslamic marinade. Let marinate for at least 30minutes-1hour or overnight.

2. In a small jar, add the ingredients for the vinaigrette and mix until combined. Set aside.

3. In a medium pan on high heat, add the tofu and cook until all the liquid has evaporated. Set aside.

4. In a large salad bowl, add all the ingredients for the salad and the cooked tofu. Top with the vinaigrette and mix with wooden spoon to combine everything.

5. Divide into 4 servings.

Refrigerate up to 4 days.
