High Protein Vegan French Toast

Craving a delicious and nutritious breakfast? This High Protein Vegan French Toast is the perfect way to start your day with a satisfying, plant-based twist on a classic favorite—packed with protein, flavor, and all the crispy, golden goodness you love!

 
 

🍽 Servings: 1 🕓 Prep Time: 5 mins 🕓 Cook Time: 5-10 mins

 

INGREDIENTS

◦ 1/2 cup soy milk
◦ 2 tbsp tapioca starch (or corn starch)
◦ 1 tbsp ground flaxseeds
◦ 1 tsp ground cinnamon
◦ 1/2 tsp baking powder
◦ 1/2 tsp vanilla extract

◦ 2 slices Bon Matin Fat Free Protein Loaf bread
◦ Avocado oil spray

Toppings
◦ 1 tbsp nut butter of choice
◦ 1 cup berry of choice, chopped
◦ Maple syrup

INSTRUCTIONS

1. In a large shalow bowl (big enough to fit the bread), add the soy milk, starch, flaxseds, cinnamon, baking powder and vanilla extract and whisk until everything is well combined.

2. In a large pan on medium heat, spray with avocado oil. Set aside.

3. Dip each side of the two slices of bread in the milk mixture for a few seconds (not too long), then add it to the pan. Cook for about 2-3 minutes or until it’s golden then flip the toast and cook for another couple of minutes. 

4. Serve immediatly with nut butter, fruit and maple syrup.
