Protein Chocolate Chip Pancakes

Treat yourself to a breakfast bliss with Protein Chocolate Chip Pancakes—fluffy, indulgent stacks studded with gooey chocolate chips and packed with protein, turning your morning into a decadent and energizing start to the day.

INGREDIENTS

◦ 1 cup gluten-free flour blend (or whole wheat flour if not gluten-free)
◦ 1 scoop protein powder of choice
◦ 1 tbsp ground flax seed
◦ 1 tsp baking powder
◦ 1/8 tsp salt
◦ 1 ripe banana, mashed
◦ 1 cup soy milk, unsweetened
◦ 1 tsp vanilla extract
◦ 1/4 cup dark chocolate chips
◦ 1/2 tsp ground cinnamon
◦ 2 tsp avocado oil

◦ 3/4 cup berries of your choice
◦ 1/4 cup dairy-free yogurt (optional)
◦ 2 tbsp pure maple syrup (optional)

INSTRUCTIONS

1. In a large bowl, add all the dry ingredients. Mix well.

2. Add in the wet ingredients (except the oil and toppings) and mix until you get a nice pancake mixture.

3. In a large pan, on medium heat, add the oil. Add about 1/4 cup of the mixture and shape with a spoon to get a nice circle. Flip after about 1-2 minutes. Cook for another 2 minutes.

4. Repeat for every pancake.

5. Serve with yogurt, berries and maple syrup.
