Vegan Creton Paté

Vegan creton is a delicious plant-based twist on the classic Quebecois spread, packed with savory flavors and a satisfying texture. Perfect for spreading on toast or crackers, this hearty recipe is a compassionate and tasty alternative to traditional meat-based versions.

INGREDIENTS
◦ 1 tbsp avocado oil
◦ 1/2 small onion, finely chopped
◦ 1 cup red lentils, dry
◦ 3/4 cup rolled oats
◦ 2 1/2 cups water
◦ 2 tsp dried parlsey
◦ 1 tsp ground clove
◦ 1/4 tsp ground cinnamon
◦ 1/4 tsp ground ginger
◦ 1/4 tsp ground nutmeg
◦ 1/4 tsp garlic powder
◦ Salt and pepper to taste
INSTRUCTIONS
1. In a large pan on medium heat, add the oil and the onion. Let it cook for a couple of minutes until slightly golden.
2. Rince the dry lentils and add them into the pan. Mix well with the onions, then add the water, oats and the spices.
3. Bring to a boil, then let simmer on low-medium heat for about 15 minutes, uncovered.
4. Once all the liquid has evaporated, grossly blend with an immersion blender for a smoother texture (optional).
5. Let it cool for at least 30 minutes, then refrigerate up to 1-2 weeks. Can be stored in the freezer up to 6 months.
6. Can be served with Bon Matin Fat Free Protein Loaf bread for a high-protein breakfast (add about 2 tbsp of creton per slice).
