
Fried Tofu Spring Rolls
Level up your weeknight meals with these fried tofu spring rolls, bursting with crunchy vegetables and flavourful tofu wrapped in a thin rice sheet. Light, refreshing and packed with flavour in every bite!
The ingredients
- 1 tsp vegetable oil
- 3 green onions, chopped
- 1 tbsp chopped garlic
- 1 extra-firm tofu, 454 g block; crumbled
- 1 coleslaw mix, 12 oz bag
- 2 tbsp reduced-sodium soy sauce
- 1 tsp brown miso
- 1 tbsp dried parsley
- ¼ tsp ground black pepper
- 2 tbsp vegetable oil
- 20 rice, sheets
- Sweet chili sauce
The method
- In a large skillet over medium-high heat, add the oil. Once hot, add the green onions and garlic. Cook for about 2 minutes.
- Add the crumbled tofu, coleslaw mix, soy sauce, miso and seasonings. Cook for about 5 minutes, until the vegetables are tender. Let cool for about 5 minutes.
- Dip a rice sheet in warm water, lay it on a cutting board, then add about 1/3 cup of the tofu mixture. Fold in the left and right sides, then roll from bottom to top.
- Repeat step 3 a second time for each roll so they hold together better.
- In the same skillet, heat the oil. Once hot, add the rolls. Cook until each side is golden and crispy.
- Serve with the sweet chili sauce.
