Lower-Sugar General Tao Tofu

The ingredients

Sauce

  • 1/3 cup low-sodium vegetable broth, or water
  • 1 tbsp reduced-sodium soy sauce
  • 1 tbsp plain rice vinegar
  • 1 tbsp low-sugar ketchup
  • 2 tbsp maple syrup
  • 1 ½ tsp garlic chili sauce
  • 1 ½ tsp cornstarch

Bowl

  • 170 g extra-firm tofu, cut into cubes
  • 1 ½ tbsp cornstarch
  • 1 tsp sesame oil
  • 1 cup broccoli, chopped
  • 1 red bell pepper, cut into strips
  • 1 cup white rice, cooked; or brown

The method

  1. In a small jar, add all the sauce ingredients and mix until smooth. Set aside.
  2. In a bowl, add the tofu and cornstarch. Mix until the tofu is evenly coated.
  3. In a large skillet, heat the sesame oil, then add the tofu. Cook until golden, then add about 3/4 of the sauce. Cook until the sauce thickens and coats the tofu well. Transfer to a separate bowl.
  4. In the same skillet, add the vegetables along with the remaining sauce and cook for about 5 minutes, until lightly cooked.
  5. Divide the tofu, vegetables and rice between 2 bowls.
