Butter Style Tofu

🍽 Servings: 6 🕓 Prep Time: 15 mins 🕓 Cook Time: 25 mins

 

INGREDIENTS

◦ 1 tbsp avocado oil
◦ 1 bloc 454g of extra firm tofu, teared into chuncks
◦ 1 small onion, chopped
◦ 1 tsbp minced garlic
◦ 1 red bell pepper, chopped
◦ 1 small whole cauliflower, chopped into small florets
◦ 2 cups of canned chickpeas, drained and rinsed
◦ 4 tbsp garam masala
◦ 2 tbsp curry powder
◦ 1 tsp paprika
◦ 1 tsp turmeric
◦ 1/2 tsp black pepper
◦ 1/4 tsp ground ginger
◦ 1 pinch of salt
◦ 1 can (735ml) of crushed tomatoes
◦ 1 1/2 cups of light coconut milk
◦ 2 cups of spinach
◦ 1/4 cup creamy natural peanut butter
◦ 2 tbsp fresh cilantro, chopped

◦ 3 cups of white rice, cooked

INSTRUCTIONS

1. In a large pan on medium-high heat, add the oil, onion and garlic. Cook for about 1 minute. Once it’s hot add the tofu and cook until slightly golden.

2. Add the tofu and cook until slightly golden.

3. Add the red bell pepper, the cauliflower and the spices. Stir until all coated and cook for 1-2 minutes.

4. Add the crushed tomatoes, peanut butter, coconut milk and the chickpeas. Stir until combined. Let simmer for 10-15 minutes.

5. Add the cilantro and the spinach and cook for 2 minutes.

6. Serve with 1/2 cup fo cooked rice and top with exta fresh cilantro.

Refrigerate up to 4 days.
