Festive Creamy Green Pasta

INGREDIENTS
◦ 170g whole wheat pasta of choice, dry
◦ 1 tsp avocado oil
◦ 2 tbsp onion, chopped
◦ 1 tsp minced garlic
◦ 2 cups fresh spinach, packed
◦ 300g silken tofu
◦ 1/2 cup fresh basil leaves
◦ Juice 1/2 lemon
◦ 3 tbsp nutritionnal yeast
◦ Salt, black pepper and chili flakes to taste
◦ Vegan parmesan cheese (optional)
INSTRUCTIONS
1. In a medium pot, boil some water, then add the pasta and cook according to the instructions on the box.
2. In a pan on medium heat, add the oil, the onion and the garlic. Cook for a couple of minutes until golden.
3. Add the spinach and cook for another 2 minutes.
4. In a blender, add the cooked spinach, silken tofu, basil leaves, lemon juice et nutritionnal yeast and blend until smooth.
5. Drain the pasta once it’s cooked, then add it to the pan along with the spinach sauce. Season with salt and black pepper to taste and let simmer on medium heat for a couple of minutes.
6. Divide into 2 servings, top with extra chili flakes and vegan parmesan cheese (optional).
