Creamy Butternut Squash Protein Pasta

This Creamy Butternut Squash Protein Pasta is the perfect blend of indulgence and nourishment, with velvety roasted squash, savory spices, and a sneaky boost of plant-based protein. It’s quick, wholesome, and destined to become your new favorite fall staple.

INGREDIENTS

◦ 150g whole wheat pasta of choice, dry (about 3 cups cooked)

◦ 1 tbsp avocado oil
◦ 1 butternut squash, cut in half with the seeds removed
◦ 1 whole garlic bulb, top cut off

◦ 300g silken tofu
◦ 1/3 cup tomato sauce
◦ 1/4 cup nutritionnal yeast
◦ 1/2 tsp ground turmeric
◦ 1/4 tsp ground ginger
◦ Salt and black pepper to taste

◦ 1/2 bloc 180g smoked tofu, gratted or cubed
◦ 3 tbsp fresh parlsey, chopped

INSTRUCTIONS

1. Preheat the oven to 425°F. On a small baking tray, lay out the butternut squash and the garlic bulb. Drizzle the avocado oil over the squash and the garlic. Cook in the center of the oven for about 30 minutes or until the squash is soft.

2. In a medium pot, boil some water, then add your pasta and cook according to the directions on the package.

3. Once the squash is cooked, scoop out the flesh of the squash and the garlic, and add it to a blender or food processor. Then add the rest of the ingredients and blend until smooth.

4. Drain the pasta once it’s cooked, then return it to the pot along with the squash sauce. Mix until everything is well combined.

5. Divide into 3 servings, and top with smoked tofu and fresh parsley.
