Caramelized Apple Oatmeal Cookies

Indulge in the perfect blend of flavors with these Caramelized Apple Oatmeal Cookies, where tender oats meet sweet, golden apples for a delightful treat. These cookies are not just a delicious snack; they bring the warmth of autumn into every bite!

INGREDIENTS
Caramelized apple
◦ 2 cups apples, finely chopped
◦ 2 tbsp maple syrup
◦ Juice of half a lemon
◦ 1 tsp ground cinnamon
Cookies
◦ 1/3 cup water
◦ 1/4 cup ground flaxseeds
◦ 1 cup plant oil of choice, melted (I used half coconut oil and half avocado oil)
◦ 1/2 cup brown sugar
◦ 1/2 cup maple syrup
◦ 2 1/2 cups whole wheat flour (if gf use a gluten-free flour blend)
◦ 1 1/2 cups rolled oats
◦ 1/3 cup walnuts, chopped
◦ 2 tsp ground cinnamon
◦ 2 tsp baking powder
◦ 1/2 tsp sea salt
INSTRUCTIONS
1. Preheat the oven to 350F.
1. In a small pot, add all the ingredients for the caramelized apple and cook on low-medium heat for about 5-10 minutes. Set aside.
3. In a small bowl, mix the flaxseeds with water. Let it sit for a couple of minutes to thicken.
4. In a large bowl, whisk together the oil, brown sugar, maple syrup and the flaxseed egg until combined and smooth. Then add the caramelized apple and mix until well combined.
5. Add all the dry ingredients to the wet mixture. Mix with a spoon until well combined.
6. With an icecream scooper, scoop up 16 balls and place them on a large baking tray. Flatten down the cookie dough balls with your hands or a spoon.
7. Bake in the center of the oven for about 20 minutes or until the botton and the sides are slightly golden. Let it cool for at least 10 minutes.
