Healthy Peppermint Chocolate Truffles

Indulge your sweet tooth with these Strawberry Chocolate Protein Bites, a delightful fusion of fruity freshness and rich chocolate. Perfect for a post-workout snack or a quick energy boost, these bites are as nutritious as they are delicious!

INGREDIENTS
◦ 1 cup dates, pitted
◦ 1/2 cup creamy nut butter of choice
◦ 1/2 cup pecans
◦ 1/4 cup cocoa powder
◦ 2 tbsp chia seeds
◦ 1 tbsp maple syrup
◦ 3/4 tsp peppermint extract
Toppings
◦ 2/3 cup dark choocolate chips
◦ 1 tsp coconut oil
◦ 1 candy cane, crushed into flakes
INSTRUCTIONS
1. In a high-speed blender, add all the ingredients, except the toppings and blend until combined.
2. With a spoon, scoop the mixture and form balls with your hands.
3. In a small bow, add the chocolate chips and coconut oil and cook in the microwave for 40 seconds.
4. Dip each truffle in the melted chocolate and place each one on a plate. Sprinkle with the candy cane flakes.
5. Freeze for 30 minutes or until the chocolate has harden.
Can be served immediatly, then refrigerate up to a week.
