Craving a warm, spiced treat that's both vegan and gluten-free? This Gingerbread Mugcake is the perfect single-serving dessert—moist, flavorful, and ready in just minutes!

INGREDIENTS

Mugcake
◦ 3 tbsp gluten-free flour blend
◦ 3 tbsp soy milk (or any plant milk)
◦ 1 tbsp ground flaxseeds
◦ 1 tbsp brown sugar
◦ 1/2 tbsp avocado oil
◦ 1/2 tbsp fancy molasses
◦ 1/2 tsp pumpkin spice
◦ 1/4 tsp baking powder
◦ 1/4 tsp salt

Frosting
◦ 1 tsp vegan butter
◦ 1/2 tsp vegan cream cheese
◦ 3 tbsp icing sugar

INSTRUCTIONS

1. In a small pot (microwave safe), add all the ingredients for the mugcake and mix until the batter is well combined.

2. Microwave for about 1 minute (up to 1 minute 30 seconds). Set aside to cool.

3. In a small bowl, add the ingredients for the frosting and mix with a spoon until a creamy consistency.

4. Top the mugcake with the frosting.

5. Serve immediatly.
