Triple Chocolate Oatmeal Bliss Cookies

INGREDIENTS

◦ 2 tbsp water
◦ 1 tbsp ground flaxseeds
◦ 1 tsp vanilla extract

◦ 3/4 cup cane sugar
◦ 1/2 cup vegan butter
◦ 1 cup gluten-free flour blend
◦ 1 cup rolled oats
◦ 1/3 cup cocoa powder
◦ 1/4 cup coconut flakes, unsweetened + more for topping
◦ 1/2 tsp baking powder
◦ 1/4 tsp baking soda
◦ 1/4 tsp salt
◦ 1 cup dairy-free dark chocolate chips
◦ 1 tsp coconut oil

INSTRUCTIONS

1. Preheat oven to 350F.

2. In a small bowl, mix the flaxseeds with water and the vanilla. Let it sit for a couple of minutes to thicken. Set aside.

3. In a large bowl, add the butter and the sugar and whisk for 1-2 minutes until you get a creamy consistency.

4. Add the flaxseed egg and whisk again until combined.

5. Add the rest of the ingredients (except the chocolate chips) and mix with a spoon until everything is well combined.

6. Add half the chocolate chips (1/2 cup) and combine with a spoon.

7. With an ice cream scooper, scoop the dough and place each ball on a baking tray with 1-2 inch between each dough ball. Flatten down a little bit each dough ball.

8. Bake in the center of the oven for about 15 minutes, then let it cool for at least 10 minutes.

9. In a small bowl, add the rest of the chocolate chips and the coconut oil and cook for about 30-45 seconds in the microwave.

10. Once the cookies have cooled, add the melted chocolate on one side of the cookies and top with the coconut flakes.
