Lentil and TVP Shepherd's Pie

The ingredients

Mashed Potatoes

  • 4 cups yellow potatoes, peeled and roughly chopped
  • 3 tbsp plant-based milk
  • 1 tbsp margarine
  • salt, black pepper, dried parsley, and garlic powder

Lentil and TVP Filling

  • 1 tsp avocado oil
  • ½ yellow onion, chopped
  • 1 tbsp garlic, chopped
  • 1 brown lentils, 19 oz can, drained and rinsed
  • 1 cup textured vegetable protein, TVP, dry
  • 1 cup water
  • 1 tbsp reduced-sodium soy sauce
  • 2 tbsp nutritional yeast
  • salt, black pepper, paprika, dried basil, dried oregano, and dried parsley
  • 1 creamed corn, 14 oz can

The method

  1. In a large pot, fill with water and add the potatoes. Bring to a boil, then reduce to medium heat and cook for 15 minutes.
  2. Once cooked, drain the water, keeping about 1/4 to 1/2 cup. Add all the mashed potato ingredients and mash until smooth. Set aside.
  3. Preheat the oven to 190°C (375°F).
  4. In a large pan over high heat, add the oil. Once sizzling, add the onion and garlic. Cook for 1 to 2 minutes, then add the lentils, TVP, and water. Stir to let the water absorb.
  5. Add the soy sauce, nutritional yeast, and spices. Cook for 2 to 3 minutes.
  6. In an 8x8-inch baking dish, add the filling to the bottom, then spread the creamed corn over it. Top with the mashed potatoes. Optional: sprinkle with dried parsley and paprika.
  7. Bake for 23 minutes, then broil on high for 2 to 3 minutes, or until the top is golden.

Storage tips

Keeps in the fridge for up to 4 days and in the freezer for up to 6 months.
