The ingredients

  • 2 cups sushi rice, cooked and seasoned with 3 tbsp plain rice vinegar
  • 1 smoked tofu, 180 g block, cubed
  • 1 ¾ cups shelled edamame, cooked
  • 1 cup carrot, grated
  • 1 cup cucumbers, sliced
  • 1 avocado, sliced
  • ¼ cup kimchi
  • ¼ cup mayonnaise
  • 3 tbsp sriracha
  • 2 green onions, chopped
  • nori, optional, sheets
  • Pickled ginger (optional)

The method

  1. In a microwave-safe bowl, add the edamame, cover with water, and microwave for 2 minutes. Drain.
  2. In a small bowl, mix the mayonnaise and sriracha. Set aside.
  3. Divide the cooked rice, smoked tofu, edamame, vegetables, kimchi, spicy mayo, and green onions among 4 bowls.
  4. Serve with pickled ginger and nori sheets, if desired.
