- 2 tbsp water
- 1 tbsp ground flaxseed
- 1 cup packed brown sugar
- ½ cup + 2 tbsp margarine
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour, or gluten-free flour
- 2 tsp cornstarch
- 1 tsp baking soda
- ¼ tsp salt
- ¾ cup dark chocolate (>70%), roughly chopped
The method
- Preheat the oven to 350°F (180°C).
- In a small bowl, mix the flaxseed with the water. Let sit for a few minutes to thicken. Set aside.
- In a large bowl, add the margarine and brown sugar, then beat with an electric mixer on high speed for 1-2 minutes until creamy.
- Add the flax egg and vanilla extract. Mix on medium speed with the mixer.
- Add the dry ingredients (except the chocolate) and mix on low to medium speed until combined.
- Fold in the chocolate pieces with a spatula.
- Using a spoon, shape medium-sized balls of dough with your hands. Place on a baking sheet, leaving 2-3 cm between each ball.
- Bake in the centre of the oven for about 17 minutes, then let cool for at least 10 minutes before enjoying.
