
Crispy Sushi Pizza
This crispy sushi pizza reimagines the flavours of sushi in a fun, tasty, easy-to-make format! Its golden, crispy rice base is topped with fresh ingredients and a source of plant-based protein, for a meal that's both nourishing and satisfying.
The ingredients
- 1 1/3 cups sushi rice, calrose, cooked
- 2 tbsp plain rice vinegar
- oil, spray
- 1 avocado
- ½ cup roasted edamame, chopped
- 45 g smoked tofu, grated
- ¼ cup cucumbers, finely chopped
- ½ mango, finely chopped
- 1 shallot, finely chopped
- 1 tbsp mayonnaise
- 1 tbsp sriracha
- 1 nori sheet, mini, cut into thin strips
The method
- In a bowl, mix the cooked sushi rice with the rice vinegar.
- Preheat the waffle iron and lightly spray both plates with cooking oil. Spread about 1/3 cup of the rice on the bottom plate. Close the waffle iron and cook for about 5 minutes, or until the rice is lightly golden and crispy. Repeat with the remaining rice to make 4 rounds.
- Meanwhile, in a medium bowl, mash the avocado with a fork. Add the edamame, smoked tofu, cucumber, mango, shallot, and mayonnaise. Mix well. Set aside.
- Evenly divide the topping over the crispy rice rounds. Garnish with sriracha and thin strips of nori, to taste.
