
Tofu Sushi Sandwich
Discover a fresh, original take on a classic with my tofu "sushi" sandwich. A fusion of vibrant flavours and satisfying textures, perfect for a quick, delicious, one-of-a-kind meal on the go!
The ingredients
- ½ cup calrose rice, cooked
- 2 nori sheets, large
- 1 tbsp spicy mayo
- 1 green onion, chopped
- 2 slices extra-firm tofu, 1.5 cm thick
- 1 tbsp soy sauce
- ½ avocado, sliced
- ½ cucumber, mini; sliced
- 1 pinch toasted sesame seeds
The method
- In a small skillet, add the tofu slices and soy sauce and cook for 3 minutes on each side (or until the tofu is golden and there's no liquid left). Set aside.
- On the nori sheet (dull side up), place 1/4 cup of rice in the centre and shape it into a square.
- Add the spicy mayo, green onion, cooked tofu, cucumber, avocado and toasted sesame seeds.
- Cover with another 1/4 cup of rice, shaping it into a square.
- Cut a 10x10 cm square from another nori sheet and place it on top of the rice. This will help close the sandwich.
- Take a small pinch of rice and press it all around the edges of the sheet to act as "glue."
- Fold in each side, making sure everything holds together well.
- Cut in half and serve on its own, with pickled ginger or soy sauce.
