Apple Pie Overnight Oats

All the comforting flavours of apple pie, in a nourishing breakfast that's super easy to make! These overnight oats are rich in protein and fibre, no protein powder needed.

The ingredients

  • 1 medium apple
  • 1 tsp maple syrup
  • ¼ cup rolled oats
  • ¼ cup textured vegetable protein, TVP, ground
  • 1 tbsp hemp hearts
  • ½ tbsp chia seeds
  • 1 cup unsweetened soy milk
  • ½ tsp ground cinnamon

The method

  1. Cut half the apple into small dice. In a small pan, heat the apple pieces with the maple syrup over medium-low heat. Stir for about 2 minutes, then cover and continue cooking for about 8 minutes, or until the apple is tender. Stir occasionally.
  2. Meanwhile, grate the other half of the apple. In an airtight container or jar, add the rolled oats, TVP, chia seeds, hemp hearts, soy milk, cinnamon, and grated apple. Mix well.
  3. Once the cooked apple is tender, spoon it on top of the oatmeal.
  4. Refrigerate for at least 8 hours.
