The ingredients

  • 2 cups rolled oats, large-flake
  • 1 cup textured vegetable protein (TVP), dry
  • ½ cup pumpkin seeds
  • ½ cup nuts, your choice, chopped
  • ¼ cup nut butter, your choice, or seed butter
  • ¼ cup maple syrup
  • 2 tbsp chia seeds
  • 2 tbsp ground cinnamon
  • 2 tsp maple extract, optional

The method

  1. Preheat the oven to 325°F.
  2. In a large bowl, add all the ingredients and mix well to coat evenly.
  3. Spread the mixture on a large baking sheet and bake in the centre of the oven for about 25 minutes.
  4. Let cool completely, then serve with milk or yogurt for a complete breakfast, or enjoy on its own as a snack.

Keeps for up to 2 weeks in an airtight container at room temperature.
