The ingredients

  • 1 cup unsweetened soy milk
  • 1/3 cup rolled oats
  • 1/3 cup pumpkin purée
  • ½ protein powder, scoop
  • 1 tbsp chia seeds
  • ½ tsp pumpkin pie spice

Toppings

  • 2 tbsp Greek-style yogurt
  • 1 tbsp pecans, chopped
  • 1 tbsp pumpkin seeds

The method

  1. In an airtight jar, add all the ingredients except the toppings. Mix until combined.
  2. Refrigerate overnight to let the oats absorb the liquid.
  3. Add the toppings, serve cold, and enjoy!
