The ingredients

  • 4 cups cooked pasta, your choice
  • 1 smoked tofu, block; cubed
  • 1 cup cucumbers, chopped
  • 1 cup cherry tomatoes, chopped
  • 2 celery, stalks; chopped
  • ¼ cup pitted green olives, chopped
  • ¼ cup hemp hearts
  • ¼ cup fresh parsley, chopped
  • 3 tbsp fresh basil, chopped

Balsamic dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • ½ lemon, juice
  • 1 tbsp Dijon mustard
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

The method

  1. In a small jar, add the dressing ingredients and mix until fully combined. Set aside.
  2. In a large salad bowl, add all the ingredients. Pour the dressing over the top and mix with a wooden spoon to combine everything well.
