Tofu Fajitas with Salsa Verde

Colourful, flavourful and full of freshness, these tofu fajitas are perfect for a simple meal that's still packed with taste! The tofu and peppers are well seasoned and lightly charred, then served in warm tortillas with a generous, creamy, tangy homemade salsa verde.

The ingredients

Fajitas

  • 1 tbsp oil
  • 1 medium onion, sliced
  • 1 extra-firm tofu, 454 g block; cut into strips
  • 3 bell peppers, large; cut into strips
  • 1 tbsp chili powder
  • 2 tsp dried oregano
  • 1 tsp cumin
  • ½ tsp garlic powder
  • 8 6-inch corn tortillas, mini
  • Oil spray

Salsa verde

  • 1 avocado
  • ½ cup fresh cilantro
  • 2 limes, juice; small
  • 2 tbsp water
  • Salt and pepper, to taste

The method

  1. In a large, deep skillet, heat the oil over medium-high heat. Add the onion, tofu and peppers. Mix and cook for a few minutes, stirring occasionally.
  2. Add the chili powder, oregano, cumin and garlic powder. Mix well to coat the tofu and vegetables. Continue cooking for about 15 minutes, stirring occasionally, until the vegetables are tender and lightly charred.
  3. Meanwhile, prepare the salsa verde. Add all the salsa ingredients to a blender. Blend until smooth. Set aside.
  4. Just before serving, heat a little oil in another skillet over medium heat. Warm the corn tortillas one at a time, about 1 minute per side, or until warm and lightly toasted while still pliable.
  5. Divide the tofu and vegetable mixture among the warm tortillas. Top with the salsa verde.

Storage tips

The mixture keeps in the fridge for up to 4 days.
