The ingredients

  • 1 cup lupini beans in brine, drained and rinsed
  • 2 cups canned mixed legumes, drained and rinsed
  • 1 cup cucumbers, chopped
  • 1 cup tomatoes, chopped
  • 1/2 small red onion, chopped
  • 1/4 cup celery, chopped
  • 2 tbsp fresh basil, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp hemp hearts

Balsamic dressing

  • Juice of 1/2 lemon
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp minced garlic
  • Salt and pepper to taste

The method

  1. Remove the thick skin (film) from the lupini beans.
  2. In a large bowl, mix all the salad ingredients. Set aside.
  3. In a small bowl, mix all the dressing ingredients.
  4. Pour the dressing over the salad and mix well to coat everything.
