
Meatless Cretons (Soy-Free Version)
Soy-free meatless cretons are a delicious plant-based take on the classic Québécois spread, packed with flavour and just the right texture.
The ingredients
- 1 tbsp avocado oil
- ½ onion, finely chopped
- 1 cup dry red lentils
- 3 cups water
- ¾ cup quick-cooking rolled oats, dry
- 2 tsp dried parsley
- 1 tsp ground cloves
- ¼ tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp garlic powder
- Salt and pepper, to taste
The method
- In a large skillet over medium heat, add the oil and onion. Cook for a few minutes until lightly golden.
- Rinse the lentils and add them to the skillet. Mix well with the onion, then add the water.
- Bring to a boil, then reduce to low-medium heat and simmer for about 15 minutes, uncovered.
- Add the oats and spices and cook for 5 minutes.
- Roughly purée with an immersion blender for a smoother texture (optional).
- Serve cold with crackers or toast.
Storage tips
Keeps in the fridge for up to 1 week and in the freezer for up to 3 months.
