
Quinoa Bowl with Sweet Potato and Crispy Beans
Transform your meals with this quinoa, sweet potato and crispy bean bowl, where the velvety texture of hummus meets crunchy beans and vegetables and the nutritional richness of quinoa, for a bowl overflowing with vibrant flavour and goodness.
The ingredients
- 1 cup sweet potatoes, roughly chopped
- 2 cups white beans, drained, rinsed and patted dry
- 1 tsp avocado oil
- paprika, garlic powder, black pepper, salt
- 2 cups kale, chopped and massaged with lemon juice and olive oil
- 2 cups quinoa, cooked
- 1 cup hummus, homemade or store-bought
- 4 cucumbers, mini; chopped
- ¼ cup sunflower seeds
Avocado dressing
- 1 avocado, small
- 3 tbsp water
- 2 tbsp mayonnaise
- 2 tbsp lemon juice, or more to taste
- 1 tsp fresh parsley, chopped
- 1 tsp fresh basil, chopped
- Salt and black pepper, to taste
The method
- Preheat the oven to 425°F (220°C).
- On a large baking sheet, add the sweet potatoes and white beans. Add the oil and spices. Toss well to coat evenly.
- Bake for about 30 minutes, or until the beans are crispy.
- In a blender, add the dressing ingredients and blend until smooth. Set aside.
- In 4 containers, add: 1/4 cup hummus, 1/2 cup kale, 1/2 cup quinoa, 1/4 cup sweet potatoes, 1 mini cucumber, 1/2 cup white beans, and 1 tbsp sunflower seeds. Top with 2 tbsp avocado dressing.
