The ingredients

TVP taco meat◦ 1 1/4 cups textured vegetable protein (TVP), dry

  • 1 ¼ cups water
  • 2 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano

Spicy chili sauce

  • ¾ cup silken tofu
  • 2 tbsp mayonnaise
  • 6 tbsp sriracha
  • 2 tbsp chili powder, 2 to 3

Salad

  • 2 cups lettuce, chopped
  • 2 cups cooked brown rice
  • 2 cups red tomatoes, chopped
  • 1 cup cooked black beans, drained and rinsed
  • 1 cup canned corn kernels, drained and rinsed
  • 1 avocado, sliced or diced
  • 1 lime

The method

  1. In a small saucepan, add the TVP, water and spices. Bring to a boil and cook for 5 minutes. Set aside.
  2. In a jar, mix the ingredients for the spicy chili sauce. Set aside.
  3. Divide the ingredients evenly among 4 large containers, then add the taco meat and spicy chili sauce. Top with lime juice, if desired.
