Tuna-Style Chickpea Sandwich

The ingredients

  • 1 19 oz chickpeas, can; drained and rinsed
  • 1 lemon, juice
  • ½ extra-firm tofu, 454 g block; grated
  • 2 celery, stalks; finely chopped
  • ½ cup fresh cilantro, chopped
  • ½ cup pickles, finely chopped
  • 3 tbsp mayonnaise
  • 2 tbsp hemp hearts
  • 1 tbsp capers
  • 1 good pinch of salt, black pepper, garlic powder and cayenne pepper
  • 3 tbsp toasted seaweed flakes, optional
  • 8 slices bread, your choice; toasted
  • 2 cups leafy greens, e.g., arugula, spinach, lettuce; your choice

The method

  1. In a large bowl, add the chickpeas and lemon juice. Roughly mash with an immersion blender.
  2. Add the remaining ingredients (except the bread and leafy greens). Mix until fully combined.
  3. Roughly blend again with the immersion blender.
  4. Using an ice cream scoop, place about 2 scoops of the mixture on a slice of bread, then add the leafy greens and the second slice of bread. Serve immediately and enjoy!

Storage tips

The mixture keeps in the fridge for up to 5 days.
