The ingredients

  • 1 ½ cups rolled oats
  • 1 cup unsweetened soy milk
  • 1 cup pumpkin purée
  • ½ cup textured vegetable protein, TVP, dry
  • ½ cup pecans, chopped
  • ½ protein powder, scoop, your choice
  • ¼ cup chia seeds
  • ¼ cup dark chocolate chips >70%
  • ¼ cup maple syrup
  • 1 flax egg, 1 tbsp ground flaxseed + 2 tbsp water
  • 1 ½ tsp pumpkin pie spice
  • 1 tsp baking powder

The method

  1. Preheat the oven to 400°F.
  2. In a large bowl, add all the ingredients, setting aside a small amount of pecans and chocolate chips for topping, and mix well with a spoon until combined.
  3. Pour the mixture into an 8x8 baking dish, add the extra chopped pecans and chocolate chips on top, then bake for 40 minutes.
  4. Divide into 4 portions.
