This beetroot and tofu spread is high in protein, low in fat, and easy to prepare. It’s a great option to keep on hand for a daytime snack that keeps you satisfied until your next meal. A delicious way to prepare tofu and beetroot!

The ingredients

6 servings

  • 3/4 of a 500g block of firm tofu
  • 1 cup pickled beets
  • 1 1/2 tbsp tahini
  • Juice of 1 lemon
  • 1/4 tsp ground coriander
  • 1/4 tsp dried basil
  • Salt and pepper to taste

The method

  1. Add all the ingredients to a blender and blend until smooth. Scrape down the sides as needed.

Let the spread rest in the refrigerator overnight; the flavors will have time to fully develop and meld together.

Storage tips

Keeps for up to 5 days in the refrigerator in an airtight container.
