
Breakfast Tofu Wrap
Revitalize your morning with this breakfast tofu burrito, a flavourful, nutritious meal filled with creamy tofu and gut-friendly probiotics, for a balanced, delicious start to the day.
The ingredients
- 1 tsp avocado oil
- ¼ yellow onion, finely chopped
- ¼ cup tomatoes, chopped
- 65 g extra-firm tofu
- 1 tbsp nutritional yeast
- 1 tsp dried parsley
- ½ tsp turmeric
- ¼ tsp paprika
- ¼ tsp black pepper
- 1/8 tsp ground cumin
- 1 tbsp water, 1 to 2
- Salt to taste
- ¼ cup handful of leafy greens, spinach, kale...; your choice
- 1 BFree high-protein tortilla, or whole wheat if not gluten-free
- ¼ cup carrots, grated
- ¼ cup red cabbage, grated
- ¼ avocado, sliced
- 2 tbsp sauerkraut
The method
- In a skillet over medium-high heat, add the oil, onion and tomatoes. Cook for about 2-3 minutes.
- Wrap the tofu in a paper towel and press to remove excess water. Then crumble the tofu directly with your hands into the skillet and cook for 1-2 minutes.
- In a small bowl, mix all the spices and water, then add to the skillet. Mix and cook for another 2 minutes.
- Add the leafy greens and cook for 1 minute. Set aside.
- On the tortilla, add the scrambled tofu, then top with the vegetables, avocado, sauerkraut and sriracha.
- Roll like a burrito and cut in half.
Storage tips
The mixture keeps in the fridge for up to 4 days.
