Chocolate Date Apple Bites

Enjoy a sweet, irresistible snack with these caramel apple, date and chocolate bites. A perfect mix of crisp apple, smooth chocolate and naturally sweet dates.

The ingredients

  • 12 Medjool dates, pitted
  • 1 medium apple
  • ½ cup dark chocolate chips >70%
  • ½ tsp coconut oil
  • 1 tsp pumpkin seeds, chopped
  • 1 tsp pecans, chopped

The method

  1. On a cutting board, open the dates slightly and arrange them to form a square.
  2. Cover with plastic wrap and flatten the dates with a rolling pin. Flip the wrap and place the whole apple in the centre.
  3. Fold the flattened dates around the apple until it's completely covered.
  4. In a small bowl, combine the chocolate chips and coconut oil, then microwave for about 30 seconds. Stir with a spoon and set aside.
  5. Insert a stick into the centre of the apple, then dip it into the melted chocolate. Make sure to coat the whole apple.
  6. Place the apple on a plate and top with the chopped nuts and seeds of your choice.
  7. Freeze for at least 20 minutes to let the chocolate harden.
  8. Once ready, cut the apple into slices.
