The ingredients
- 1 ½ cups frozen shelled edamame
- 1 avocado
- ½ lemon, juice
- ¼ cup fresh parsley
- 1 tsp tahini
- salt, black pepper and cayenne pepper
The method
- In a bowl, add the edamame, cover with water and microwave for 2 minutes.
- In a blender, add all the ingredients and blend for at least 1 minute, until smooth.
- Serve with toasted bread and vegetables of your choice, if desired.
