- 5 tbsp water
- 2 tbsp ground flaxseed
- 3 bananas, ripe
- ½ cup cane sugar
- ¼ cup coconut oil, melted
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- ½ cup all-purpose flour
- ¼ cup oat bran, or wheat bran
- 1/3 cup protein powder, your choice, plain
- 2 tsp ground cinnamon
- 1 ½ tsp baking soda
- 1 tsp baking powder
- ¼ tsp ground ginger
- ¼ tsp ground clove
- ¼ tsp salt
- 1/3 cup walnuts, chopped
The method
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix the ground flaxseed with the water. Let thicken for 5 minutes.
- Grease a muffin tin with coconut oil or use parchment liners. Set aside.
- In a large bowl, mash the bananas until puréed, then add the sugar, oil, and vanilla. Whisk for 1 to 2 minutes.
- Add the dry ingredients and 1/4 cup of the walnuts, and mix with a spoon until the batter is smooth.
- Using an ice cream scoop, divide the batter among the muffin cups. Top with the remaining walnuts.
- Bake for 25 minutes. Let cool for 5 to 10 minutes.
