
Quick-Pickled Red Onions

The ingredients
- 2 red onions
- 1 ½ cups water
- 1 ½ cups white vinegar
- 1/3 cup cane sugar
- 2 tsp salt
- 2 tsp mixed peppercorns
The method
- In a pot, add the water, vinegar, sugar, salt, and peppercorns. Bring to a boil and simmer until the sugar and salt are fully dissolved (a few minutes). Let cool.
- Cut the onions into thin rounds. Divide between 2 (500 ml) jars and add the liquid.
- Refrigerate overnight.
- Add these delicious pickled onions to your salads, roasted veggies, tacos, and more.
