Vegetable Scrambled Tofu

The ingredients

  • 1 tsp avocado oil
  • ¼ onion, finely chopped
  • ¼ cup tomatoes, chopped
  • ¼ cup mushrooms, chopped
  • 85 g extra-firm tofu, 1/5 of a block
  • 1 tbsp nutritional yeast
  • 1 tbsp dried parsley
  • ½ tsp turmeric
  • ¼ tsp paprika
  • 1/8 tsp ground cumin
  • 1/8 tsp black pepper
  • 1 tbsp water, 1 to 2
  • Salt to taste
  • ½ cup spinach

The method

  1. In a skillet over medium-high heat, add the oil, onion, tomatoes and mushrooms. Cook for 2-3 minutes.
  2. Wrap the tofu in a paper towel and press to remove excess water. Crumble the tofu directly into the skillet with your hands and cook for 1-2 minutes.
  3. In a small bowl, mix all the spices with the water, then add to the tofu. Mix and cook for another 2 minutes.
  4. Add the spinach and cook for 1 minute. Serve hot with sliced bread, if desired.
