
Air Fryer Zucchini Fries with Ranch Dip
A lighter alternative to traditional fries: these air fryer zucchini fries are rich in fibre, low in fat and packed with flavour! A simple and delicious way to fit more vegetables into your day.
The ingredients
- 1 zucchini, medium
- ¼ cup unsweetened plant-based milk
- 2 tbsp all-purpose flour, or gluten-free
- 1/3 cup plain breadcrumbs
- 2 tbsp nutritional yeast
- ½ tsp garlic powder
- ½ tsp onion powder
- 1/8 tsp pepper
- 1/8 tsp salt
- oil, spray
Ranch dip
- 2 tbsp plain plant-based yogurt
- 1 tbsp mayonnaise
- 1 tsp dried parsley
- ½ tsp minced garlic
- ¼ tsp onion powder
The method
- Preheat the air fryer to 200°C (400°F).
- Cut the zucchini lengthwise into wedges about 2 cm (1/4 in) thick. Pat dry with a paper towel to remove excess moisture.
- In a shallow bowl, add the milk and flour and mix well. In a second bowl, mix the breadcrumbs, nutritional yeast and spices.
- Dip the zucchini wedges in the batter, coating all sides, then coat them in the breadcrumb mixture.
- Arrange the zucchini fries in the air fryer basket without touching, lightly spray with oil and cook for about 20 minutes.
- In a small bowl, add all the ranch dip ingredients and mix well with a spoon.
- Serve hot with the ranch dip on the side or as a starter.
