Green Salad with Sprouted Lentils

Fresh, crunchy and colourful, this green salad with sprouted lentils is the perfect side to add a touch of freshness and nutrition to your meal.

The ingredients

  • 1 cup sprouted lentils
  • 1 cup arugula
  • ½ cup cucumbers, sliced
  • ½ cup tomatoes, sliced
  • 1/8 red onion, sliced into rounds
  • 1 tbsp hemp hearts

Dressing

  • ½ lemon, juice
  • 1 tsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

The method

  1. In a medium bowl, add the lentils, arugula, cucumber, tomato, red onion and hemp hearts and mix well.
  2. In a small bowl or container, add the dressing ingredients and mix well.
  3. Serve as a side with the protein of your choice for a complete meal.
