Here's a simple, comforting dessert that reimagines the classic flavours of Samoa cookies in a fruitier, more nourishing form.
The ingredients
- 1 medium apple
- 2 tbsp unsweetened coconut flakes
- 1 ½ tbsp almond butter
- 1 ½ dark chocolate >70%, 15 g; square
The method
- Cut the apple horizontally into rings about 1 to 1.5 cm thick. Using an apple corer or a small knife, remove the core from the centre of each ring to form rings.
- In a small bowl, mix the almond butter and coconut flakes. Spread the mixture evenly over each apple ring.
- Add the chocolate to a small microwave-safe bowl and heat for about 1 minute, stirring as needed, until fully melted.
- Drizzle each apple ring with the melted chocolate.
- Refrigerate for 10 to 15 minutes, or until the chocolate is slightly set.
