
Watermelon Mint and Tofu Feta Summer Salad
Fresh, colourful and perfect for hot days, this summer salad combines sweet watermelon, cool mint and homemade tofu feta for a light, satisfying, protein-rich meal or side. A simple, quick recipe full of flavour that will quickly become a summer staple!
The ingredients
Lime dressing
- 1 tbsp olive oil
- Juice of 2 small limes
- Pepper to taste
Salad
- 6 cups watermelon, cut into cubes
- 2 cups cucumbers, sliced
- 1/2 cup pumpkin seeds
- 1/2 cup fresh mint, chopped
- 1/2 red onion, sliced into rounds
- 1 batch of my Tofu Feta recipe
The method
- In a small jar with a lid or in a bowl, mix all the dressing ingredients until smooth. Set aside.
- In a medium salad bowl, add the watermelon, cucumbers, pumpkin seeds, mint and onion. Add the marinated tofu feta.
- Pour the dressing over the salad and gently toss to coat all the ingredients.
My tips
Serve immediately or keep for up to 3 days, adding the dressing only right before serving.
