
Dairy-Free, Egg-Free Protein Waffles
These dairy-free, egg-free protein waffles are perfect for a filling, simple and indulgent breakfast. Fluffy on the inside, they make it easy to add protein first thing in the morning to support satiety and keep your energy up all day.
The ingredients
- 1 flax egg, 1 1/2 tbsp ground flaxseed + 2 tbsp water
- 1/3 cup all-purpose flour, or gluten-free flour blend for a gluten-free version
- 1 protein powder, scoop; of your choice
- 1 tsp baking powder
- 1 tsp granulated sugar
- ½ tsp ground cinnamon
- 1/8 tsp salt
- ½ cup unsweetened soy beverage
- 1 tsp vanilla extract
- 1 tsp avocado oil
Toppings
- 2 cups frozen berries
- 2 tbsp chia seeds
- 1 tbsp pure maple syrup
The method
- In a small bowl, mix the flaxseed and water. Let sit for a few minutes so the mixture thickens.
- In a medium bowl, add all the dry ingredients and mix well.
- Add the wet ingredients (except the oil and toppings), then mix until you get a slightly thick, even batter.
- Preheat the waffle iron. Using a brush, lightly coat the plates with the oil. Pour about 60 ml (1/4 cup) of batter into the waffle iron. Close and cook for 4 to 5 minutes, or until the waffle is golden brown.
- Repeat step 4 with the remaining batter.
- Meanwhile, in a bowl, mix the berries and maple syrup. Microwave for 1 to 2 minutes, then add the chia seeds and mix. Let sit for a few minutes so the mixture thickens slightly.
- Top the waffles with the berry mixture and serve immediately.
