
Herb and Jalapeño Tofu Spread
Level up your snacks with this lemony herb and jalapeño tofu spread: a creamy, zesty blend packed with fresh herbs and a spicy kick. Perfect spread on bread, in a sandwich, or as a dip for vegetables!
The ingredients
- 1 firm tofu, 350 g block; drained and rinsed
- 1 cup fresh parsley
- 1 ¼ cups fresh cilantro
- ¼ cup extra virgin olive oil
- ¼ cup pickled jalapeños
- 1 lemon, juice
- 2 cloves garlic
- 3 tbsp nutritional yeast
- 2 tbsp hemp hearts
- 2 tbsp sunflower seeds
- 2 tbsp apple cider vinegar
- ¼ tsp salt
- ¼ tsp black pepper
- Water to adjust texture (as needed)
Toppings
- chopped cherry tomatoes & fresh cilantro
The method
- In a blender, combine all the ingredients except the toppings and blend until smooth. Scrape down the sides of the bowl as needed.
- Right before serving, top with tomatoes and cilantro. Serve with vegetables, crackers or toasted bread.
