
Peppermint Nutrition Truffles
Refresh your desserts with these peppermint nutrition truffles, an indulgent bite that combines the natural sweetness of dates, the richness of chocolate and a festive touch of peppermint!
The ingredients
- 1 cup pitted dates
- ½ cup creamy nut butter, your choice
- ½ cup pecans
- ¼ cup unsweetened cocoa powder
- 2 tbsp chia seeds
- 1 tbsp maple syrup
- ¾ tsp peppermint extract
Toppings
- 2/3 cup dark chocolate chips >70%
- ½ tsp coconut oil
- 1 candy cane, crushed
The method
- In a high-speed blender, add all the ingredients except the toppings, and blend until smooth.
- Using a spoon, scoop the mixture and roll into balls with your hands.
- In a small bowl, add the chocolate chips and coconut oil, then microwave for 40 seconds.
- Dip each truffle in the melted chocolate and place on a plate. Sprinkle with crushed candy cane.
- Freeze for 30 minutes or until the chocolate has hardened.
