
High-Protein Legume Salad
This high-protein legume salad is the perfect meal for hot days when you want something fresh without spending time cooking. Made with lupini beans, it's a nourishing meal that keeps you satisfied while staying light and refreshing.
The ingredients
- 1 cup lupini beans in brine, drained and rinsed
- 2 cups canned mixed legumes, drained and rinsed
- 1 cup cucumbers, chopped
- 1 cup tomatoes, chopped
- ½ red onion, small; chopped
- ¼ cup celery, chopped
- 2 tbsp fresh basil, chopped
- 2 tbsp fresh parsley, chopped
- 2 tbsp hemp hearts
Balsamic dressing
- ½ lemon, juice
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- ¼ tsp minced garlic
- Salt and pepper to taste
The method
- Remove the thick skin (film) from the lupini beans.
- In a large bowl, mix all the salad ingredients. Set aside.
- In a small bowl, mix all the dressing ingredients.
- Pour the dressing over the salad and mix well to coat everything.
